Wild Rice A La Ferguson Recipe
Ingredients
1 cup (250 mL) wild rice
3 tbsp (50 mL) butter
1 medium-sized onion, chopped fine
2 celery stalks, diced
1/2 cup (125 mL) parsley, chopped
1/4 tsp (1 mL) thyme
3 medium carrots, grated
1 1/2 cups (375 mL) chicken consomme
1 1/2 cups (375 mL) Cheddar cheese, grated
2 tbsp (30 mL) butter, melted
Directions
€¢ Wash the wild rice under cold running water. Spread on a towel and let dry for 2 hours.
€¢ Microwave the rice according to directions for wild rice in the Rice Cooking Chart.
€¢ Place butter in a 6-cup (1.5 L) microwave-safe dish. Melt 2 minutes at HIGH.
€¢ Add the onion, stir well. Microwave 3 minutes at HIGH, stirring once after 2 minutes.
€¢ Add the celery, parsley, thyme, carrots. Stir until well mixed.
€¢ Butter an 8 X 8-inch (20 X 20 cm) or a 6-cup (1.5 L) microwave-safe baking dish. Fill with alternate layers of the cooked wild rice, vegetable mixture and grated cheese.
€¢ Pour the chicken consomme over all. Cover with the dish lid or a piece of foil.
€¢ Preheat the convection part of your microwave at 350°F (180°C). Bake the casserole for 1 hour.
