Wild Pigeons Perugian Recipe
Ingredients
3 pigeons or Rock Cornish hens
4 to 6 tablespoons olive oil
1 cup dry red wine
10 green olives
4 fresh sage leaves or 1/4 teaspoon ground sage
1/2 teaspoon juniper berries
1/2 teaspoon salt
Dash pepper
Directions
1. Brown pigeons in 2 tablespoons hot olive oil in a Dutch oven, adding more oil if necessary. Stir in wine, 2 tablespoons olive oil, olives, sage, juniper berries, salt, and pepper.
