Wild Goose Becancour Recipe
Ingredients
| 1 wild goose cut in pieces and marinated in white wine for two days | ||
| 4 thin slices salt pork | ||
| Onions | 2 , minced | |
| 5 apples, pared and minced | ||
| Garlic | 2 Clove (5gm), minced | |
| 1 cup apple juice or cider | ||
| 1 cup marinade, strained capers | ||
Directions
Place salt pork, onions, apples and garlic in baker.
Add pieces of bird.
Dot with herbs, .season.
Pour apple juice or cider and marinade.
Close and bake.
Before serving, sprinkle with capers.
