Ingredients

 Carcass of wild roast duck, plus any leftover parts
 Water3 Quart
 3 chicken boullion cubes
 1 onion studded with 3 cloves
 2 ribs celery, tops included, cut up
 Leeks2 , sliced
 Parsley sprig6
 Dill weed sprig3
 Parsnip1 , sliced
 Bay Leaf1
 Salt To Taste
 Pepper To Taste

Directions

Place carcass and leftover duck in soup kettle.
Add water and bouillon cubes.
Bring to boil.
Lower heat and add remaining ingredients.
Simmer gently for 3 1/2 to 4 hours.
Strain, discarding solids and serve.

Being somewhat of a cook for over 40 years now, I find it strange that this method does not call for stripping tender bits of duck meat for the soup. Perhaps it is supposed to be a broth and nothing else because everything is strained out.

Hi Bob...I think the idea is to serve a clear broth and moreover the chances of finding any meat on the carcass seems nil.
