Wild Duck Soup Recipe
Ingredients
| Carcass of wild roast duck, plus any leftover parts | ||
| Water | 3 Quart | |
| 3 chicken boullion cubes | ||
| 1 onion studded with 3 cloves | ||
| 2 ribs celery, tops included, cut up | ||
| Leeks | 2 , sliced | |
| Parsley sprig | 6 | |
| Dill weed sprig | 3 | |
| Parsnip | 1 , sliced | |
| Bay Leaf | 1 | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Place carcass and leftover duck in soup kettle.
Add water and bouillon cubes.
Bring to boil.
Lower heat and add remaining ingredients.
Simmer gently for 3 1/2 to 4 hours.
Strain, discarding solids and serve.
