Wiggs Recipe

Ingredients
1 tablespoon active dry yeast
2 tablespoons warm water (105°-115°F)
1/4 cup sugar
1/2 teaspoon salt
4 tablespoons unsalted butter
1/3 cup milk
2 1/2-3 cups flour
1/4 teaspoon ground ginger
1/4 teaspoon grated nutmeg
1/4 teaspoon ground mace
1/4 teaspoon ground cloves
1 tablespoon caraway seeds, lightly crushed
1 egg
2 tablespoons currants
How to make Wiggs
1 Dissolve yeast in warm water. Set aside for 5 minutes. Heat sugar, salt, butter, and milk to warm (105°-115°F).2 Combine 2 cups flour, ginger, nutmeg, mace, cloves, and caraway seeds in mixing bowl. Add yeast mixture and milk mixture. Mix thoroughly.
3 Add egg, currants, and enough remaining flour to make a soft dough.
4 Knead on lightly floured surface until smooth€”about 10 minutes. Place in greased bowl, turning to coat top.
5 Cover; let rise in warm place until double€”about 1 1/2 hours. Punch down dough. Shape into a round loaf. Place in greased 2-inch-deep, 8-inch round pan.
6 Cover; let rise in warm place until double€”about 30€”45 minutes. Using scissors or sharp knife, make 4 deep cuts across top of loaf, to permit division into 8 wedges (wiggs).
7 Bake in a preheated 350°F oven about 45-55 minutes or until done. Cool on wire rack.
