2 1/4 cups whole-wheat flour
 
3/4 cup packed brown sugar
 
1/2 cup butter or margarine softened
 
1/4 cup water
 
1 teaspoon baking powder
 
2 eggs
 
1/2 cup firmly packed pitted prunes, diced

Directions

1. Into large bowl, measure first 5 ingredients and 1 egg. With mixer at low speed, beat ingredients until well blended. Gently stir in diced prunes. Shape dough into a ball; wrap with plastic wrap and refrigerate 1 hour or until easy to handle.
2. Preheat oven to 350°F. On lightly floured surface with floured rolling pin, roll dough into a 14" by 12" rectangle. With pastry wheel or knife, cut dough into twenty-eight 3" by 2" rectangles. Place cookies on ungreased cookie sheet, 1/2 inch apart. With dull edge of knife, score each cookie with an attractive design.
3. In cup, beat remaining egg slightly; brush each cookie with some beaten egg. Bake cookies 25 minutes or until lightly browned. With pancake turner, remove cookies to wire racks to cool. Store cookies in tightly covered container.
