Whole Wheat Date Nut Loaf Recipe

Ingredients

 
1 1/2 cups boiling water
 
2 tsp baking soda
 
1 cup pitted dates, finely chopped
 
2 eggs, beaten
 
6 Tbsp vegetable oil
 
1 1/2 cups raw sugar
 
3 cups wholewheat flour
 
1 tsp salt
 
2 tsp baking powder
 
1 tsp vanilla
 
1 cup walnuts, shelled and coarsely chopped

Directions

Pour boiling water over soda and mix well.
Add dates.
Cool.
Stir in eggs.
Blend vegetable oil with sugar.
Sift together flour, salt, and baking powder; and blend with oil-sugar mixture.
Add date-egg mixture, vanilla and walnuts.
Stir well and pour batter into a greased loaf pan.
Bake in a 350 degree oven for 1 hour.
Cool loaf before cutting.
