Ingredients

 Brown sugar1 Tablespoon
 Lukewarm water3 3/4 Cup (16 tbs)
 Active dry yeast package3
 12 cups Wholewheat flour
 Salt1 Tablespoon
 Lard2 Tablespoon

Directions

Dissolve 1 tsp of the sugar in 1 cup of the warm water in a bowl.
Sprinkle the dried yeast on top.
Leave for about 10 minutes till frothy.
Mix flour, salt and the remaining sugar in a bowl.
Rub in the lard, then add the yeast liquid and the rest of the water.
Mix to a dough.
Knead the dough thoroughly till it feels firm and elastic and no longer sticky.
This should take 5-10 minutes.
Shape the dough into a ball and place in an oiled plastic bag.
Leave to rise till doubled in size.
Turn the dough onto a board and knead again till firm.
Divide into two or four and flatten each piece firmly with the knuckles to knock out air.
Shape and place in loaf pans.
Brush the tops with a little salted water and put each pan into an oiled plastic bag.
Leave to rise till the dough comes to just over the top of the pan and springs back when pressed with a floured finger - about 1 hour at room temperature.
Preheat the oven to 450°.
Bake the loaves for 30-40 minutes.
Unmold to cool on a wire rack.
