Whole-Wheat Honey Oatmeal Muffins Recipe
whole wheat honey oatmeal muffins is a healthy and delicious muffin recipe that mixes honey and brown sugar with crunchy rolled oats. Flavored with cinnamon, this muffin comes out moist and cake like due to the buttermilk in it.
Ingredients
1 cup whole-wheat flour 250 mL
1 cup rolled oats 250 mL
11/2 tsp baking powder 7mL
1 tsp baking soda 5mL
1/2 tsp salt 2mL
1/4 tsp cinnamon lmL
1/4 cup packed brown sugar 50 mL
1 egg
1/4 cup butter or margarine,melted and cooled 50 mL
1/4 cup honey 50 mL
11/4 cups buttermilk 300 mL
Directions
In a large bowl, combine flour, oats, baking powder, baking soda, salt, cinnamon and brown sugar.
In another bowl, whisk together egg, butter, honey and buttermilk.
Pour into flour mixture, stirring just until moistened and blended.
Spoon batter into prepared muffin tin, filling cups to the top.
Bake in preheated oven for 15 minutes.
HINT: Use a muffin pan for a manicure tray.
Put bottles of base, topcoat, various colors nail polish, cotton, etc. into each cup.

I substituted
Olive oil, for butter
Soy milk, for butter milk
and added an extra 1/2 tsp of pumpkin pie spic
Bake 18 mins @ 350 F.......Everybody was fighting over the last 1!

These are delicious! I baked mine at 350° for 17-20 minutes. Next time, I think I'm going to add raisins or dried cranberries.
