Whole-Wheat Honey Muffins Recipe
Who doesn’t crave for honey muffins? This whole wheat honey muffin recipe combines the golden goodness of honey with wheat flour. The chopped walnuts add an extra crunch. These honey muffins are irresistible. They are so good, I can almost eat them half baked!!
Ingredients
1 3/4 cups whole-wheat flour 425 mL
4 tsp baking powder 20 mL
1/2 tsp salt 2mL
1 egg, beaten
3/4 cup milk 175 mL
1/3 cup honey 75 mL
1/4 cup vegetable oil 50 mL
1/3 cup chopped walnuts 75 mL
Directions
In a large bowl, combine whole-wheat flour, baking powder and salt.
In another bowl, blend together egg, milk, honey, oil and walnuts.
Pour egg mixture into dry ingredients and stir until well moistened.
The batter should be a bit lumpy.
Spoon batter into prepared pan, filling cups two-thirds full.
(Baking may have to be done in batches). Place muffin pan on a rack in the microwave.
Bake on High for 2 1/2 minutes, rotating pan once during cooking.
