Whole Wheat Flaky Pastry Recipe
Ingredients
1 cup whole wheat pastry flour
1 cup brown rice flour
6 tablespoons unsalted butter
2 tablespoons oil
2 tablespoons ice water
Directions
Preheat oven to 400°F.
Sprinkle a 9-inch pie pan lightly with whole wheat flour.
Combine the flours in a bowl.
Cut butter into flour with a pastry blender or knives.
Add oil gradually, working it in with fingers.
Then add ice water.
Blend mixture briefly until water is evenly distributed.
Press into prepared pie pan, or roll out between well-floured sheets of wax paper and place in pie pan, making a high fluted edge around the outside.
If baking shell without filling, prick it well with a fork.
Bake 10 to 12 minutes.
