Whole Wheat Date Muffins Recipe

Ingredients
1 cup whole wheat flour 250 mL
1/2 cup all purpose flour 125 mL
1/3 cup natural bran 100 mL
2 tbsp brown sugar 25 mL
4 tsp baking powder 20 mL
1/2 tsp salt 2 mL
1 egg
1 cup milk 250 mL
1/4 cup vegetable oil 50 mL
2 tbsp liquid honey 25 mL
1/2 cup chopped dates 125 mL
Directions
In mixing bowl, combine flours, bran, sugar, baking powder and salt.
In separate bowl, beat egg; blend in milk, oil and honey.
Add to dry ingredients, stirring just until moistened but still lumpy.
Stir in dates.
Spoon batter into greased or paper lined muffin cups, filling each 2/3 full.
Bake in 375°F (190°C) oven for 20 minutes or until firm to the touch.
