Whole-Wheat Date Muffins Recipe

Ingredients

 
1 cup chopped pitted dates 250 mL
 
1 tsp baking soda 5mL
 
3/4 cup boiling water 175 mL
 
1 egg
 
1/2 cup granulated sugar 125 mL
 
1 tsp salt 5mL
 
1 tsp vanilla 5mL
 
11/2 cups whole-wheat flour 375 mL
 
1 tsp baking powder 5mL
 
1/2 cup chopped walnuts 125 mL
 
1/4 cup butter, melted 50 mL

Directions

In a large bowl, toss together dates and baking soda.
Pour boiling water over top.
Mix well and set aside to cool.
In another bowl, whisk together egg, sugar, salt and vanilla.
Add to date mixture.
Stir in flour, baking powder and walnuts.
Add melted butter, stirring just until blended.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 15 to 20 minutes.
HINT: Store shelled nuts (and coconut) in tightly covered containers in the fridge or freezer to prevent from becoming rancid.
When ready to use, heat thoroughly at 350° F (180° C.)
