Ingredients

 
3 tablespoons yeast
 
1 1/2 cups warm water
 
1/2 cup cup packed brown sugar
 
1/4 cup honey
 
1/4 teaspoon mace
 
1/4 teaspoon nutmeg
 
1/2 teaspoon lemon extract
 
1/2 cup butter
 
3 eggs
 
5 cups whole wheat flour
 
1/2 cup butter
 
Brown Sugar Topping

Directions

Combine yeast and water, and set aside.
In the Bosch bowl, cream together brown sugar, honey, mace, nutmeg, lemon extract and 1/2 cup butter.
Add eggs, and beat well.
Scrape down from sides of bowl.
Add flour and yeast.
Mix for 5 to 7 minutes, and turn out onto a lightly floured sheet.
Cover with a towel, and refrigerate for 1 hour.
On a lightly floured surface, roll dough out to a rectangle about 1/2 inch in thickness.
Spread generously with remaining 1/2 cup butter.
Fold dough into thirds, and roll out again.
Repeat folding and rolling one more time.
Replace dough on the lightly floured sheet, cover, and chill for an additional hour.
Shape rolls as desired, and let rise until double.
Bake in a 400° F.oven for 8 minutes.
Spread with Brown Sugar Topping while still warm.
