Ingredients
1 pork loin roast, boneless (3 to 4 pounds)
1 can (6 ounces) tomato paste
1/4 cup chopped onion
1 canned chipotle chili, very finely chopped; or 2 teaspoons chili powder
1 clove garlic, minced
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups chicken stock, or 1 1/2 cups hot water plus 2 chicken bouillon cubes
1 cup dairy sour cream
Directions
Put pork loin into a shallow baking pan; if necessary, cut in half so meat will fit into pan.
Combine tomato paste, onion, chili, garlic, salt, and pepper in a saucepan.
Stir in chicken stock.
Cook about 5 minutes.
Pour liquid over meat in pan.
Bake at 325°F about 1 1/4 hours.
Occasionally spoon sauce over meat during baking, and check to see if additional water is needed to prevent drying.
When meat is tender, remove to serving platter.
Stir sour cream into sauce remaining in pan; warm slightly but do not boil.
Pour over meat on platter.
To serve, slice meat about 3/4 inch thick
