Whole Baked Schnapper Recipe

This recipe for the whole baked schnapper is simple and savory. The schnapper is stuffed with breadcrumbs, chopped apricots and shallots along with cheese, eggs and parsley. The head and tail covered with a foil to prevent burning or over cooking, the whole schnapper is roasted whole and can be served with a side of choice. Ingredients

 
500 g whole schnapper, cleaned
 
2/3 cup wholemeal breadcrumbs
 
1/4 cup chopped apricots
 
2 shallots, finely chopped
 
1/4 cup grated tasty cheese
 
2 teaspoons chopped parsley
 
1 egg, lightly beaten

Directions

Preheat oven to 180°C.

Combine breadcrumbs, apricots, shallots, cheese, parsley and egg together.
Mix well, 3.
Fill cavity of schnapper with bread stuffing.

Shield head and tail of schnapper with foil.
Place directly on Low Rack; cook for 15-20 minutes on LOW MIX/BAKE 180°C Turn over halfway through cooking.
