Whole Baked Celery Root Recipe

1 medium-sized celery root
1/2 tsp (2 mL) each salt and sugar
Directions
Peel celery root.
Mix the salt and sugar in a plate.
Roll the celery root in it, then wrap in plastic wrap Set on a rack.
Microwave at HIGH 8 to 10 minutes, depending on the size of the root.
Check doneness with the point of a knife passed through the paper.
Let stand 10 minutes before unwrapping.
To serve: Unwrap and roll in soft or melted butter and minced parsley or chives, or mash with butter until creamy, or dice and add to a stew.
