Spray a cookie sheet with no-stick spray and set aside.
In a large bowl, stir together the all-purpose flour, whole-wheat flour, baking powder, baking soda and salt.
Make a well in the center of the mixture.
In a small bowl, lightly beat 2 of the egg whites.
Stir in the buttermilk.
Add the buttermilk mixture to the flour mixture and stir just until moistened.
Sprinkle 1 tablespoon of flour evenly on a work surface.
Then knead the dough about 30 seconds or until almost smooth.
Transfer the dough to the prepared cookie sheet and shape it into a round loaf, about 6" in diameter.
Using a sharp knife, slash a cross on the top of the loaf.
Lightly beat the remaining 1 egg white, then brush it over the loaf.
Bake about 35 minutes or until golden.
Carefully transfer the loaf to a wire rack and cool slightly before slicing.
