Whole Wheat Potato Onion Bread Recipe

Ingredients
1 cup unbleached white flour
1 package dry active yeast
1 tablespoon brown sugar
3/4 teaspoon salt
2 teaspoons dried tarragon, crumbled
1/2 cup milk
1/4 cup water
1 tablespoon vegetable oil
3/4 cup unseasoned mashed potatoes
1/4 cup sour cream
1/2 cup finely minced onion
1 to 1 & 1/2 cups whole wheat flour, approximately
Directions
1. Mix the white flour, yeast, brown sugar, salt, and tarragon in a bowl.
2. Heat the milk, water, and oil until very warm. Stir into the first mixture. Then beat at medium speed with an electric mixer for 2 minutes.
3. Stir in the potatoes, sour cream, onion, and enough whole wheat flour to make a firm dough. Turn out onto a floured surface and knead for 10 minutes, or until elastic. Put in an oiled bowl, turning to oil the top of the dough. Cover with a sheet of plastic wrap, allowing the wrap to touch the dough.
4. Let rise in a warm place for 45 minutes, or until doubled.
5. Punch the dough down, shape into a loaf, and put in an oiled 9- by 5- by 3-inch loaf pan.
6. Let rise for 30 minutes, or until light.
7. Preheat the oven to 375 degrees.
8. Bake for 30 to 35 minutes, or until done. Turn out on a wire rack to cool.
