Whole Wheat Pasta With Chicken Recipe

No one can eat just one is my claim for this recipe of Whole Wheat Pasta With Chicken. Whenever I have Italian friends visiting, I always prepare Whole Wheat Pasta With Chicken which is the most savored dish of their cuisine. This is the most comforting Side Dish recipe I have come across. The primary ingredient in Whole Wheat Pasta With Chicken is always Pasta. I am sure you and I will approve that this Whole Wheat Pasta With Chicken is really delicious.

Ingredients

 
For Pasta
 
Tomatoes 4 large
 
Baby spinach 1 large bunch
 
Garlic 3 cloves
 
Chicken breasts 3
 
Olive oil 2 tbsp
 
Salt & pepper to taste
 
Romano Cheese 1/2 cup
 
Whole wheat pasta 500 gms
 
For Roasted Tomatoes
 
Ripe Tomatoes 10-15
 
Garlic 2 cloves
 
Sugar 1 tsp
 
Salt & pepper to taste
 
Fresh thyme 1 tbsp
 
Olive Oil 1/4 cup

Directions

Generously coat the chicken breasts with the olive oil, salt and pepper, and bake in a preheated oven at 375° F until cooked through.
This takes about 30 minutes.
Remove the chicken from the oven, and cut into 1 1/2 inch cubes.
Set aside.
Chop the tomatoes coarsely including any juices and add these to the chicken pieces.
Heat 1 tbsp olive oil in a pan and saute the spinach with garlic salt and red pepper flakes.
Cook the pasta as per packet instructions.
Return the pasta to the pot, and add the spinach, tomatoes, and chicken and cook for a few minutes over high heat until piping hot.
Procedure for roasted tomatoes Preheat the oven to 275° F.
Halve the tomatoes, and place skin side down on a baking sheet.
Sprinkle over them the garlic, herbs, salt, pepper, and sugar.
Drizzle with the olive oil and place in the oven.
Bake for about two hours or until they have shriveled yet still remain moist.
Cool, and use as desired.
