Whole Wheat, Oatmeal, and Apple Muffins Recipe
Ingredients
| 1 cup whole-wheat flour | ||
| All purpose flour | 1/2 Cup (16 tbs) | |
| Baking powder | 1 Tablespoon | |
| Cinnamon | 1 Teaspoon | |
| Salt | 2 Teaspoon | |
| Oatmeal | 1 Cup (16 tbs), uncooked | |
| Brown sugar | 1/2 Cup (16 tbs), sifted | |
| Milk | 3/4 Cup (16 tbs) | |
| 2 eggs or 1/2 cup prepared egg substitute | ||
| Oil | 1/3 Cup (16 tbs) | |
| 1 Granny Smith (or other tart) apple, peeled and diced small | ||
| Cinnamon sugar | ||
Directions
Line a 12-cup muffin pan with paper liners.
Preheat the oven to 400° F.
Sift the flours, baking powder, cinnamon, and salt into a large bowl.
Stir in the oatmeal and sifted brown sugar.
Mix together the milk, eggs, and oil.
Pour the liquid into the dry ingredients.
Mix just enough to blend.
Stir in the apple cubes.
Divide the batter among the muffin cups.
Sprinkle the tops with cinnamon sugar.
Bake in the top third of the oven for 20 minutes, or until the muffins are lightly browned on top and dry inside.
