Ingredients
1 1/4 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1 egg
1/2 cup Mazola corn oil
1/3 cup brown sugar
1/4 cup honey
1 cup quick-cooking oats
1/2 cup raisins
Directions
In a small bowl, stir together flour, baking soda, salt, ginger and cinnamon.
In a large bowl with mixer at medium speed, beat egg, oil, brown sugar replacement and honey until mixture is thick and smooth.
Reduce speed to low.
Add flour mixture, beat until blended.
Stir in oats and raisins.
Drop by heaping teaspoonfuls 2 in. (5 cm) apart onto greased cookie sheets.
Bake in 375°F (190°C) oven 6 to 8 minutes or until edges are browned.
