Ingredients
1 package active dry yeast
1/3 cup lukewarm water (105°-115°F)
1/2 teaspoon sugar
1/2 cup low-fat (1% milkfat) milk
1/3 cup molasses
3 tablespoons corn or vegetable oil
1 '1/4 teaspoons salt
1 egg
2 cups whole-wheat flour
3/4 cup all-purpose flour
1/2 cup rolled oats
Directions
1 In a small bowl, combine the yeast, water, and sugar.
Let stand for 5 minutes or until foamy.
Meanwhile, lightly grease a 9"x 5"x 3" loaf pan and set aside.
In a small saucepan, heat the milk, molasses, oil, and salt over low heat for about 45 seconds or just until lukewarm.
2 In a large bowl, with an electric mixer set on low speed, beat together the yeast and milkmixtures.
Beat in the egg.
Gradually work in the whole-wheat flour, all-purpose flour, and oats.
Beat the dough at moderate speed for 4 minutes or until smooth and elastic.
Scrape the dough into the prepared pan, coverwith lightly greased plastic food wrap, and let rise in a warm, draft-free place for 1 hour or until the dough almost reaches the top of the pan.
3 Preheat the oven to 350° F.
Bake for 50 minutes or until the loaf is crusty and sounds hollow when tapped on the bottom.
If the loaf appears to be browning too quickly, coverwith aluminum foil duringthe last 15 minutes of baking.
