Whole Wheat Macaroni Salad with Cheese Dressing Recipe
|Whole wheat macaroni||2 Cup (32 tbs)|
|Boiling water||4 Cup (64 tbs) (Or As Needed)|
|Green beans||1 Pound, cut into 1-inch pieces to make approximately 2 cups|
|Diced carrots||2 Cup (32 tbs)|
|Chopped parsley||2 Tablespoon|
|Chopped green onions||1⁄2 Cup (8 tbs)|
|Black pepper||1⁄2 Teaspoon|
|Cottage cheese||1 Cup (16 tbs)|
|Ricotta cheese||1 Cup (16 tbs)|
|Prepared mustard||2 Teaspoon|
|Lemon juice||2 Tablespoon|

Drain and rinse with cold water.
Cook green beans and carrots according to preferred method.
Drain if necessary.
Combine the macaroni, beans, carrots and seasonings.
Process cottage cheese and ricotta in electric blender.
Add mustard and lemon juice and blend until smooth.
Toss macaroni mixture with cheese dressing until ingredients are well coated.
Chill and serve.
