Whole Wheat Fruit Cookies Recipe

Ingredients
1/2 cup honey
1/2 cup vegetable oil
2 eggs, well beaten
1 teaspoon pure vanilla extract
1/8 teaspoon salt
2 cups whole wheat flour
1/2 cup raisins
1/2 cup chopped nuts
1/4 cup chopped dates
1/4 cup chopped figs
Directions
1. Preheat the oven to 375 degrees.
2. Blend the honey with the oil. Beat in the eggs and vanilla.
3. Stir in the remaining ingredients and mix well. The batter should be stiff but soft enough to place by the teaspoonful on an oiled baking sheet. If the batter is too thick, add a small quantity of unsweetened fruit juice. If too thin, add a little more flour. (This is a necessary precaution as the water absorption of different whole wheat flours varies so much.) Put on baking sheets.
4. Flatten the teaspoons of dough with the bottom of a tumbler dipped in water. Bake for 12 to 15 minutes, or until done.
