 Whole wheat flour1 1⁄4 Cup (20 tbs)
 All purpose flour1⁄4 Cup (4 tbs)
 Baking powder2 Teaspoon
 Salt1⁄4 Teaspoon
 Eggs2
 Low fat yogurt1 Cup (16 tbs)
 Molasses2 Tablespoon
 Vegetable oil1 Tablespoon
 Carrots1⁄2 Cup (8 tbs), shredded

Directions

MAKING
1) Sift into a bowl the flours, baking powder and salt
2) Into another bowl , add in the eggs yogurt, molasses and the oil and using a fork beat well
3) Add in the shredded carrots
4) Then add in the sifted flours and mix well to combine well
5) Spoon the batter into a paper lined muffin tray
6) Bake at 375 F for 20 minutes

SERVING
7) Serve warm
