Pinch of sugar
 
2 cups plus 2 tablespoons (500 ml) warm milk (110°F, 43°C)
 
3 pkgs. active dry yeast
 
2-2/3 cups (400 g) white bread flour
 
1 teaspoon salt
 
2-2/3 cups (400 g) whole-wheat flour
 
1/2 cup plus 1 tablespoon (150 ml) oil
 
Additional white flour

Directions

Stir sugar into warm milk and sprinkle with yeast.
Let stand 5 minutes or until the surface is frothy.
Stir gently to moisten any dry particles remaining on top.
Sift white flour and salt into a large bowl; add whole-wheat flour.
Stir oil into yeast mixture.
Pour into flour mixture, combining to make a dough.
On a floured surface, knead dough 5 to 10 minutes until smooth and elastic.
Cover and let rise in a warm place 30 minutes.
Sprinkle a baking sheet with flour.
Lightly knead risen dough.
Shape into a loaf; place on floured baking sheet.
Cover and let stand in a warm place 30 minutes.
Preheat oven to 375°F (190°C).
Sprinkle loaf with a little additional white flour.
Bake 50 to 60 minutes or until loaf sounds hollow when tapped on underside.
