 Trout6 Pound
 Soft bread crumbs6 Tablespoon
 Garlic3 Clove (5gm), minced
 Minced parsley2 Tablespoon
 3 tablespoons chopped prosciutto or other ham
 3 tablespoons plus 1 teaspoon olive oil
 Pepper1/4 Teaspoon
 Lemon wedges

Directions

1. Preheat oven to 475°. Slash trout diagonally twice on each side, 1/4 to 1/2 inch.
2. In a small bowl, combine bread crumbs, garlic, parsley, prosciutto, 1 teaspoon olive oil, and pepper. Lightly fill slashes in trout with bread mixture.
3. Rub 1/2 tablespoon olive oil over each fish. Place fish in an oiled baking dish and bake 12 to 15 minutes, or until fish is just opaque near bone.
