Whole Okra And Tomato Saute Recipe
This Whole Okra and Tomato Saute tastes incredibly good ! I always had a problem cooking okra as slicing it would always make it gummy ! Cooking them whole is a welcome idea ! Try this Whole Okra and Tomato Saute and let me know if you like it !
Ingredients
| 1 pound small whole fresh okra (no more than 2 inches long) | ||
| 2 dices bacon | ||
| Onion | 1 Medium, sliced | |
| 1 pound ripe tomatoes, halved, seeded and chopped | ||
| Water | 1/4 Cup (16 tbs) | |
| Bay Leaf | 1 | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Place okra in colander and rinse under cool, running water; drain.
Cut off stems but do not cut into the conical cap and seed section (this will cause okra to "weep" and become sticky).
Set aside.
Cook bacon in large skillet over medium heat until crisp.
Remove bacon to paper towel; set aside.
Add onion and okra to hot drippings in skillet; cook and stir 7 to 10 minutes until onion is transparent.
Add tomatoes, water and bay leaf to okra mixture.
Cook and stir 8 minutes or until vegetables are tender.
Remove and discard bay leaf.
Season with salt and pepper.
Transfer to warm serving dish.
Crumble reserved bacon and sprinkle over top.
