Ingredients

 Tarragon1 Teaspoon, chopped
 Shallots2 Teaspoon, diced
 White wine4 Ounce
 Heavy cream12 Ounce
 Whole grain mustard1 Ounce, prepared
 Salt To Taste
 Pepper To Taste

Directions

Sweat shallots in a 2 quart stockpot.
Add wine and reduce to approximately 1 ounce liquid.
Add heavy cream and reduce until nappe (coats spoon and is slightly thickened).
Add mustard, tarragon, salt and pepper.
