Whiting Fillets Recipe

Ingredients
4 tablespoons flour
1/4 cup cold water
1/2 teaspoon baking powder
4 small fillets whiting
Salt and pepper
Hot oil for frying
A pinch of herbs
Directions
Mix the flour, baking powder, seasonings, and herbs with the water (no lumps, please) until you have a batter that is about the consistency of thick cream.
Put the fillets into this and when they are well coated drop them, one at a time, into a pan of smoking hot oil.
The batter will puff up and become very crisp, while the fish is moist and succulent inside.
