White Wine Onion Soup Recipe

4 tbsp (60 mL) butter
 
4 to 6 onions, peeled and thinly sliced, in rings
 
1/4 tsp (1 mL) thyme
 
3 cups (750 mL) chicken consomme
 
1 cup (250 mL) dry white wine
 
1/2 tsp (2 mL) sugar
 
1 tsp (5 mL) salt
 
1/4 tsp (1 mL) freshly ground pepper
 
2 cups (500 mL) light cream
 
1 1/2 cups (375 mL) Swiss cheese, grated

Directions

Place the butter in a 10-cup (2.5 L) microwave-safe bowl and melt 2 minutes at HIGH.
Add the onions and thyme, stir well.
Microwave, uncovered, 5 minutes at HIGH.
Stir, add the chicken consomme, wine, sugar, salt and pepper.
Microwave 8 minutes at HIGH.
Add the cream, microwave 3 minutes at HIGH.
Serve hot with a bowl of grated Swiss cheese; each person can add cheese to taste.
Helpful hint: For carefree barbecues, partially cook chicken, ribs, etc.
in the microwave oven.
Season and finish on the grill.
