2 tablespoons flour salt and pepper 8—9 inch flan ring, or quiche pan; pastry bag and star tube (optional)

Directions

Method Make pastry dough and chill; line flan ring and bake blind in a hot oven (400° F) for 20 minutes.
Beat egg yolk into mashed potato with half the cheese.
Arrange flaked haddock in flan shell with scallions on top and hard- cooked eggs around edge.
Make bechamel sauce and spoon over the flan.
Decorate with a border of mashed potato, preferably using a pastry bag fitted with a star tube.
Sprinkle flan with remaining cheese and brown in a hot oven (425°F) for 10-15 minutes.
How- ever, if flan was prepared in advance, reheat it for 20-30 minutes in a moderate oven (350°F) until hot and brown.
