Ingredients
1.5 tbs unsalted butter
1 tbs olive oil
1/2 chopped onion
2 stalks chopped celery
1/2 lb chopped baby carrots
2 14.5 oz cans organic white beans
11 qt low sodium chicken broth
1 bay leaf
1-2 fresh sage leaves, chopped
sea salt and black pepper to taste
1-3 new potatoes, peeled
Directions
heat butter and oil. add onion, celery, carrots and saute until lightly softened. Add chicken broth and beans and herbs and salt and pepper. Bring to a boil, reduce heat and simmer 30 mins. Add bay leaf and sage continue to cook about 10 mins more.
Puree in blender in batches.
If thin, add 1-2 diced new potatoes (peeled). Boil until cooked, puree until thick.

We love white bean soup. Sometimes I make tiny veal meatballs to float in it. Learned this so many years ago from Annie Armanini a neighbour whom taught me much about cooking.
She even had a pasta room! I always thought she was Italian, her DH was, and she was from a village above Dubrovnik! That woman could really cook.
