1 tbsp (15 mL) butter
 
1 cup (250 mL), very full, thinly sliced mushrooms
 
2 French shallots or 4 green onions
 
1 tbsp (15 mL) cornstarch
 
1/2 cup (125 mL) white wine or juice of half a lemon
 
1 tbsp (15 mL) cream
 
Salt and pepper to taste

Directions

€¢ Place the butter in a 4-cup (1 L) microwave-safe bowl and melt 1 minute at HIGH.
€¢ Add the washed mushrooms, thinly sliced.
€¢ Finely chop the shallots or green onions. Add to the mushrooms together with the cornstarch, mix well.
€¢ Microwave 2 minutes at HIGH. Stir.
€¢ Add the white wine or the lemon juice, cream, salt and pepper to taste, and microwave 2 minutes more at HIGH, stirring halfway through the cooking.
€¢ This sauce reheats well, 2 minutes at MEDIUM.
