White Waterfall Soup Recipe
Ingredients
4 cups Basic Oriental Stock
2 shiitake mushrooms, rinsed and slivered
1 cup shirataki (yam threads), rinsed and cut into 2-inch pieces
3 scallions including green tops, cut in half lengthwise, then at 2-inch intervals
2 teaspoons tamari or soy sauce
Directions
Combine the stock and shiitake mushrooms in a medium-size saucepan and bring to a boil.
Reduce heat and simmer for 10 minutes.
Add shirataki, scallions.
