White Gazpacho Recipe
Ingredients
| 2 cucumbers, peeled, seeded, and cut in 1-inch chunks | ||
| 2 cups chicken broth, canned or homemade | ||
| Garlic | 1 Clove (5gm), quartered | |
| 1/4 cup chopped scallions, white and tender greens | ||
| Plain yogurt | 2 Cup (16 tbs) | |
| Wine vinegar | 2 Tablespoon | |
| 4 tablespoons or more chopped fresh dill | ||
| Chopped tomatoes | 2 , garnish | |
Directions
Place cucumbers, 1 cup of the chicken broth, garlic, and scallions in food processor.
Process to desired consistency.
Remove to serving bowl and blend well with yogurt, vinegar, 2 tablespoons of the dill, and remaining chicken broth.
Top each serving with chopped tomatoes and a generous helping of fresh dill.
