Ingredients
1/2 red pepper, deseeded and finely chopped
2 tablespoons butter
1 tablespoon frozen peas
1 lb sole fillets, skinned and flaked
Salt and pepper
2 large, firm tomatoes, peeled and sliced
1 1/2 cups crushed potato chips
Directions
1 Place the pepper (reserving a little for garnish) and butter in a 600ml/1 pint (2 1/2 cup) bowl. Microwave on full power for 1 minute.
2 Add the peas, fish, salt and pepper, and stir.
3 Arrange the tomato slices over the base of an entree dish. Season with a little salt and pepper.
4 Evenly distribute the fish mixture over the tomatoes, and cover with a lid or plastic wrap. Pierce the plastic wrap, if used.
5 Microwave on full power for 4 minutes. Remove lid and drain off any surplus liquid.
6 Sprinkle the crisps (potato chips) over the fish, and microwave, uncovered, on full power for 2 minutes.
7 Serve immediately, garnished with reserved pepper.
