 Eggs6 Large
 Granulated Sugar3/4 Cup (16 tbs)
 Vanilla1/4 Teaspoon
 1 cup sifted pastry flour with pinch salt

Directions

? Preheat oven to 400 °F (200 °C). Line 9-in (23-cm) springform cake pan with buttered and floured waxed paper. Set aside.
? Place eggs, sugar and vanilla in stainless steel bowl. Place bowl over saucepan half-filled with hot water over medium heat. Beat ingredients with electric beater 3 minutes or until mixture becomes very thick.
? Remove bowl from saucepan. Divide flour into thirds and incorporate 1/3 at a time by sifting over batter. Fold well between each addition.
? Pour batter into prepared mold and bake 35 to 40 minutes. Let cake cool slightly before unmolding.
? Serve cake plain or divide into 2 layers and decorate.
