White Beans With Knackwurst Recipe
Ingredients
| White beans | 1 Pound | |
| Prunes | 1 Pound | |
| Salt | 1/2 Teaspoon | |
| 2 raw potatoes, peeled | ||
| 4 slices side bacon, diced | ||
| Onion | 1 , chopped | |
| Flour | 1 Tablespoon | |
| Tarragon | 3/4 Teaspoon | |
| Savory | 3/4 Teaspoon | |
| 1/2 tsp pot herbs | ||
| Knackwurst | 1 Pound | |
Directions
Soak beans overnight hi cold water.
Next morning soak prunes in 1 1/2 cups water for 1 hour, then simmer until prunes are tender.
Cool and save the liquid.
Pit the prunes and set aside.
Add salt to the beans and bring to a boil.
Cover and simmer about 1 hour.
Add the potatoes, prune juice and a little more boiling water if necessary.
Continue simmering for another hour.
Meanwhile, fry the bacon and the onion until onion begins to brown, then stir in the flour and heat until flour colors slightly.
Drain about 1/2 cup of the liquid from the beans into the frying pan and stir to remove brown bits from the bottom.
Scrape bacon mixture into the bean mixture and add tarragon, savory and pot herbs, sliced Knackwurst and prunes.
Cover and simmer 1/2 hour.
Taste and add salt and pepper.
