Ingredients

 Olive oil2 Tablespoon
 2 shallots or 1/2 small onion, finely chopped
 Garlic2 Clove (5gm), chopped
 2 x 400 g cans cannellini beans, drained
 50 ml / 2 fl oz stock or water
 Handful flat-leaf parsley, leaves roughly chopped

Directions

1. Heat oil in a saucepan and tip in shallots or onion. Gently cook for 5 mins, add garlic, then give it another 2 mins until soft.
2. Tip beans into pan and roughly mash. Add stock or water to loosen, stir in parsley, then season.
