White Bean, Parsley and Garlic Mash Recipe
Ingredients
| Olive oil | 2 Tablespoon | |
| 2 shallots or 1/2 small onion, finely chopped | ||
| Garlic | 2 Clove (5gm), chopped | |
| 2 x 400 g cans cannellini beans, drained | ||
| 50 ml / 2 fl oz stock or water | ||
| Handful flat-leaf parsley, leaves roughly chopped | ||
Directions
1. Heat oil in a saucepan and tip in shallots or onion. Gently cook for 5 mins, add garlic, then give it another 2 mins until soft.
2. Tip beans into pan and roughly mash. Add stock or water to loosen, stir in parsley, then season.
