2 tablespoons lemon juice
 
1 1/2 teaspoons olive or salad oil
 
1/2 teaspoon sugar
 
1/4 teaspoon dried dillweed or fennel seed, crushed
 
1/8 teaspoon pepper
 
1 clove garlic, minced
 
1 15 ounce can white kidney beans, drained and rinsed
 
1/2 cup chopped green or sweet red pepper
 
1/2 cup chopped cucumber
 
1/4 cup sliced green onions

Directions

In a medium mixing bowl stir together lemon juice, oil, sugar, dillweed or fennel seed, pepper, and garlic.
Add beans, green or sweet red pepper, cucumber, and green onions.
Toss to coat.
Cover and refrigerate for 2 to 24 hours.
