Whipped Yams In Shells Recipe
Ingredients
| 4 medium-sized yams, baked | ||
| Salt | 1/2 Teaspoon | |
| Ground nutmeg | 1/2 Teaspoon | |
| Ground ginger | 1/4 Teaspoon | |
| Lemon peel | 1 1/4 Teaspoon, grated | |
| Lemon juice | 2 Tablespoon | |
| Honey | 3 Tablespoon | |
| Butter/Margarine | 2 Tablespoon | |
Directions
Slit potato peel; scoop out centers and reserve shells intact.
Whip yam pulp with remaining ingredients.
Fill reserved shells with yam mixture and set on a baking sheet.
Heat in a 350°F oven about 20 minutes.
Garnish with lemon slices and sprigs of parsley.
