Whipped Cream Cake Recipe

1 cup whipping cream
 
2 eggs
 
1 cup sugar
 
1 tsp vanilla
 
1 1/2 cups sifted all-purpose flour
 
2 tsp baking powder
 
1/4 tsp salt
 
2 tbsp sugar
 
1/4 tsp cinnamon

Directions

Heat oven to 350 degrees.
Grease an 8-inch square cake pan.
Whip the cream until stiff peaks form.
Add eggs and beat well.
Add 1 cup sugar and vanilla and beat again.
Sift flour, baking powder and salt together into mixture and stir to blend.
Pour into prepared pan.
Bake about 35 minutes or until top springs back when touched lightly in the centre.
Remove from oven.
Combine 2 tbsp sugar and cinnamon and sprinkle evenly over top.
Cool in pan.
