Wheat Patties Recipe

1 cup red lentils
 
3 cups water
 
4 tablespoons semolina or farina
 
1 cup bulgur, wheat
 
1 1/2 teaspoon salt
 
2 tablespoons minced onion
 
Red pepper to taste
 
Water
 
2 tablespoons flour
 
Corn oil or olive oil for frying

Directions

Boil the lentils with water, then simmer lightly covered until cooked, about 45 minutes, stirring constantly.
While the mixture is still hot, add semolina, then bulgur, salt, onion and pepper.
Mix well.
Cover, and leave for about thirty to forty minutes.
Knead the mixture, dipping your hands in water, for about ten minutes.
Add flour to make the mixture firm, and knead one more minute.
Divide the mixture into walnut size balls.
Makes about forty patties.
Flatten them, and fry a few patties at a time in very hot oil.
Make sure that they will keep their shape.
If not, add a little more flour.
