Wheat-Free Muffins Recipe
Wheat-Free Muffins are delicious and easy to make. I serve them to complete a weekend luncheons. They are just too yummy. Try this Wheat-Free Muffins recipe!
Ingredients
1 Cup Oat Bran
1/2 Cup Cornmeal
1 Cup Rice Flour
1 Cup Coconut
1/2 Cup Raisins
1 Tbsp. Baking Powder
1 Tsp. Soda
Salt, Optional
1 Cup Butter Milk
2 Large Eggs
1/3 Cup Brown Sugar
1/4 Cup Safflower Oil
Directions
Combine the first eight ingredients.
Whisk together the buttermilk, eggs, sugar and oil.
Pour into the dry ingredients stirring quickly.
Spoon into muffin pans.
Bake at 375 degrees 15 minutes
