6 eggs
 
5 tablespoons cottage cheese
 
2/3 cup wheat germ
 
1/4 teaspoon pure vanilla extract
 
1 tablespoon butter
 
Maple syrup or honey

Directions

1. Put the eggs, cheese, wheat germ, and vanilla into the container of an electric blender or food processor and blend or process for 30 seconds.
2. Melt the butter in a 10-inch skillet. Pour in the egg mixture and cook over medium heat until browned on the bottom; turn and brown on the other side.
