Wheat Germ Jam Bars Recipe
|Whole wheat flour||1 1⁄4 Cup (20 tbs)|

|Butter||6 Tablespoon, softened|

|Grated lemon rind/Grated orange rind||2 Teaspoon|

|Seedless raspberry jam/Apricot preserve / other jam||3⁄4 Cup (12 tbs)|

2. Mix together the flour, salt, and 1/2 cup wheat germ in large bowl.
3. Beat together the butter, 1/4 cup sugar, egg yolks, rind, and vanilla.
4. Stir in dry ingredients. With your hands press mixture into 13-by 9- by 2-inch baking pan, building up the edges to about 1/2 inch.
5. Bake for about 12 minutes.
6. Beat the egg whites until foamy throughout. Gradually add the remaining sugar and beat until stiff. Fold in the nuts and remaining wheat germ.
7. Spread jam on the baked crust, then spread the egg white mixture over jam. Bake for 15 to 18 minutes longer, or until golden brown. Remove from the oven and cool on a wire rack. Cut in small bars.
