Weston Eggs Recipe
Weston Eggs are important part of the weekend brunch for my family. We are crazy about these delicious Weston Eggs! Try them for yourself!
Ingredients
8 oz. spaghetti, cooked for 8 to 10 minutes and thoroughly drained
4 hard boiled eggs
2 tablespoons mayonnaise
1 tablespoon tomato puree
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
8 fl. oz. double cream
1 hard boiled egg yolk
Directions
Push the spaghetti and the eggs through a food mill or, alternatively, puree them in a blender.
Place the mixture in a medium sized mixing bowl and, using a wooden spoon, gradually stir in the mayonnaise, tomato puree, salt, black pepper and cream, beating until all the ingredients are thoroughly combined.
Transfer the mixture to a small souffle dish and place the dish in the refrigerator to chill for 1 hour.
Remove the dish from the refrigerator and crumble the remaining egg yolk over the top.
Place the mixture in a medium sized mixing bowl and, using a wooden spoon, gradually stir in the mayonnaise, tomato puree, salt, black pepper and cream, beating until all the ingredients are thoroughly combined.
