Western Curry Platter Recipe

| Raisins | 3/4 Cup (16 tbs) | |
| Cooked rice | 2 Cup (16 tbs) | |
| Onion | 2 Tablespoon, minced | |
| Parsley | 1 Tablespoon, chopped | |
| Salt | 1/4 Teaspoon | |
| Butter/Margarine | 3 Tablespoon | |
| Cornstarch | 3 Tablespoon | |
| Curry powder | 2 Teaspoon | |
| Milk | 2 Cup (16 tbs) | |
| 12 slices packaged ham | ||
| Canned peach | 6 | |
| Chutney | 6 Tablespoon | |
| Maraschino cherries | 6 | |
Directions
Chop eggs, reserving 1 yolk.
Combine chopped eggs, raisins, rice, onion, parsley and salt.
Set aside.
Place butter in a 4 cup glass measuring cup.
Microwave 1 minute or until melted.
Stir in cornstarch and curry powder.
Gradually stir in milk.
Microwave 5 to 7 minutes or until thickened.
Stir every minute.
Stir 1 cup sauce into rice mixture.
Using 2 slices ham, evenly divide rice mixture in center of ham slices.
Fold ends over rice.
Place fold-side-down in a 12x8x2 inch glass baking dish.
Leave space along one side of dish for peaches.
Pour remaining sauce over 6 ham rolls.
Arrange peaches along one side of dish.
Spoon 1 tablespoon chutney in the center of each peach.
